Ingredients
  

For the Muffins

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt or sour cream
  • 2 tsp vanilla extract
  • 1 1/2 cups diced apples Granny Smith or Honeycrisp

For the Crumble

  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup unsalted butter melted

Instructions
 

For the Muffins

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly with cooking spray.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a medium mixing bowl, beat eggs, granulated sugar, brown sugar, oil, yogurt, and vanilla until smooth.
  • Gradually add the wet ingredients to the dry ingredients, folding gently. Stir in diced apples.
  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

For the Crumble

  • In a small bowl, combine flour, brown sugar, and cinnamon. Add melted butter and mix with a fork until crumbly.
  • Sprinkle the crumble evenly over the muffin batter.
  • Baking
  • Bake in the preheated oven for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

These muffins freeze well; wrap individually in plastic wrap and store in a freezer-safe bag for up to 3 months.
For an extra burst of flavor, add a sprinkle of cardamom or allspice to the batter.
