Equipment

  • Large mixing bowl
  • 8x8-inch baking dish
  • Skillet or baking sheet (for chips)
  • Tongs or slotted spoon (for frying chips)

Ingredients

For the Dip:

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese softened
  • 1/2 cup buffalo sauce like Frank’s RedHot
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder

For the Toppings:

  • 1/4 cup chopped green onions
  • 1/4 cup extra shredded cheddar or mozzarella optional

For the Tortilla Chips:

  • 8 corn tortillas cut into triangles
  • Vegetable oil for frying or brushing
  • Salt to taste

Instructions

For the Dip:

  • Prepare the Base: In a large mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch dressing. Whisk until smooth.
  • Add the Chicken and Cheese: Fold in the shredded chicken, cheddar cheese, mozzarella cheese, garlic powder, and onion powder. Mix well.
  • Assemble the Dip: Transfer the mixture to a greased baking dish. Spread it evenly and top with extra cheese, if desired.
  • Bake: Preheat your oven to 375°F (190°C) and bake the dip for 20–25 minutes, or until bubbling and golden on top.

For the Tortilla Chips:

  • Fry the Chips: Heat about an inch of vegetable oil in a skillet over medium-high heat. Fry tortilla triangles in batches for 1–2 minutes per side until golden and crispy. Drain on paper towels and sprinkle with salt.
  • Bake the Chips (Alternative): Brush tortilla triangles with oil, sprinkle with salt, and bake at 375°F (190°C) for 10–12 minutes, flipping halfway through.

To Serve:

  • Sprinkle the baked dip with chopped green onions. Serve immediately with tortilla chips, celery sticks, or other dippers of your choice.

Notes

Make Ahead: Assemble the dip up to a day in advance and bake just before serving.
Storage: Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave.
Variations: Replace chicken with roasted cauliflower or add crispy bacon for a loaded twist.
