Main Ingredients (Lighter Version):
- 2 lbs Yukon Gold potatoes thinly sliced
- 1.5 cups Gruyere cheese shredded (1 cup for sauce, 0.5 cup for topping)
- 2 cups low-fat milk
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tbsp cornstarch
- Salt and pepper to taste
Optional Additions:
- Fresh thyme or rosemary for extra aroma

- A pinch of nutmeg for warmth in the sauce
Step 1: Prepare the Potatoes
Wash and peel the potatoes (optional for a rustic look).
Slice them evenly, about 1/8-inch thick, using a mandoline or sharp knife.
Step 2: Make the Cheese Sauce
In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 30 seconds.
Stir in flour and whisk continuously for 1 minute to remove the raw taste.
Slowly add milk and heavy cream, whisking constantly until thickened.
Remove from heat and stir in 2 cups of Gruyere cheese until melted.
Season with salt, pepper, and a pinch of nutmeg.
Lighter Version:
Mix 1 tbsp cornstarch with 2 tbsp cold water until smooth.
Heat olive oil in a saucepan over medium heat. Add garlic powder and sauté for 30 seconds.
Add low-fat milk and bring to a simmer. Stir in cornstarch slurry and whisk until thickened.
Stir in 1 cup Gruyere cheese until melted.
Step 3: Layer and Bake
Preheat oven to 350°F (175°C).
Grease a 9x13-inch baking dish.
Layer the potatoes evenly, slightly overlapping.
Pour cheese sauce over each layer, repeating until all ingredients are used.
Sprinkle the remaining 0.5 cup of Gruyere cheese on top.
Cover with foil and bake for 45 minutes.
Remove foil and bake for another 15 minutes until golden and bubbly.
For extra crispiness, broil the dish for the last 2-3 minutes.
Can be made ahead of time and reheated before serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
