Ingredients
  

Main Ingredients (Classic Version):

  • 2 lbs Yukon Gold potatoes thinly sliced
  • 2.5 cups Gruyere cheese shredded (2 cups for sauce, 0.5 cup for topping)
  • 2 cups heavy cream
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cloves garlic minced
  • 1 cup milk
  • Salt and pepper to taste

Main Ingredients (Lighter Version):

  • 2 lbs Yukon Gold potatoes thinly sliced
  • 1.5 cups Gruyere cheese shredded (1 cup for sauce, 0.5 cup for topping)
  • 2 cups low-fat milk
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tbsp cornstarch
  • Salt and pepper to taste

Optional Additions:

  • Fresh thyme or rosemary for extra aroma
  • Crumbled bacon for smoky richness
  • Sautéed onions for added depth
  • A pinch of nutmeg for warmth in the sauce

Instructions
 

Step 1: Prepare the Potatoes

  • Wash and peel the potatoes (optional for a rustic look).
  • Slice them evenly, about 1/8-inch thick, using a mandoline or sharp knife.

Step 2: Make the Cheese Sauce

  • In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 30 seconds.
  • Stir in flour and whisk continuously for 1 minute to remove the raw taste.
  • Slowly add milk and heavy cream, whisking constantly until thickened.
  • Remove from heat and stir in 2 cups of Gruyere cheese until melted.
  • Season with salt, pepper, and a pinch of nutmeg.

Lighter Version:

  • Mix 1 tbsp cornstarch with 2 tbsp cold water until smooth.
  • Heat olive oil in a saucepan over medium heat. Add garlic powder and sauté for 30 seconds.
  • Add low-fat milk and bring to a simmer. Stir in cornstarch slurry and whisk until thickened.
  • Stir in 1 cup Gruyere cheese until melted.

Step 3: Layer and Bake

  • Preheat oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish.
  • Layer the potatoes evenly, slightly overlapping.
  • Pour cheese sauce over each layer, repeating until all ingredients are used.
  • Sprinkle the remaining 0.5 cup of Gruyere cheese on top.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and bake for another 15 minutes until golden and bubbly.

Step 4: Serve and Enjoy!

  • Let the dish rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

For extra crispiness, broil the dish for the last 2-3 minutes.
Can be made ahead of time and reheated before serving.
