Ingredients
  

For the Ginger Syrup (Sweetened Version)

  • 1 cup fresh ginger peeled and sliced
  • 2 cups water
  • 3/4 cup honey maple syrup, or sugar (adjust to taste)
  • 1 teaspoon vanilla extract optional
  • 1/4 teaspoon sea salt

For the Sugar-Free Ginger Concentrate

  • 1 cup fresh ginger peeled and sliced
  • 2 cups water
  • Juice of 1 lemon
  • 1/2 teaspoon stevia or monk fruit sweetener optional
  • 1/4 teaspoon sea salt

For Assembling the Ginger Ale

  • 1 cup ginger syrup or concentrate
  • 3-4 cups sparkling water adjust to taste
  • Juice of 1 lime optional
  • Ice cubes
  • Fresh mint or lemon slices for garnish

Instructions
 

Make the Ginger Syrup or Concentrate

  • Simmer the Ginger - In a medium saucepan, combine the sliced ginger and water. Bring to a boil, then reduce heat and simmer for 20 minutes.Tip: The longer you simmer, the stronger the ginger flavor will be.
  • Sweeten (If Using Sugar) - If making the sweetened version, stir in your preferred sweetener until fully dissolved. Simmer for another 5 minutes.Tip: Taste and adjust sweetness by adding more or less sweetener as desired.
  • Strain and Store - Remove from heat and strain the liquid into a clean jar, discarding the ginger pieces. Let it cool before refrigerating.Tip: Store the syrup in a sealed container for up to one week.

Assemble the Ginger Ale

  • Mix with Sparkling Water - Fill a glass with ice cubes, then add 1/4 to 1/2 cup of ginger syrup or concentrate, depending on your taste preference. Top with sparkling water and stir gently.Tip: Add a splash of fresh lime juice for extra brightness.
  • Garnish and Serve - Garnish with fresh mint, lemon slices, or extra ginger for an elegant touch.Tip: For an extra chilled drink, use frozen ginger cubes instead of ice.

Notes

Store ginger syrup in the refrigerator for up to one week.
For a fermented version, use a ginger bug starter and allow the mixture to sit for 3-5 days before refrigerating.
Adjust sweetener levels according to your preference for a perfect balance of flavor.
