For The Espresso Layer

  • 1/4 cup strong brewed espresso cooled
  • 2 tablespoons maple syrup
  • 1/2 teaspoon coffee extract optional

For The Chocolate Layer (Optional)

  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • 1/2 cup chia pudding base before setting

For The Vanilla Layer (Optional)

  • 1/2 teaspoon vanilla bean paste or extra vanilla extract
  • 1/2 cup chia pudding base before setting
  • For Assembly And Topping
  • 1/2 cup dairy-free yogurt or coconut cream
  • 2 tablespoons cocoa powder for dusting
  • Dark chocolate shavings or cacao nibs optional

Instructions
 

Prepare The Chia Pudding Base

  • In a bowl, whisk chia seeds, almond milk, maple syrup, and vanilla extract. Let sit for 5 minutes, then whisk again to prevent clumps.

Whisking twice ensures a smooth, creamy texture.

  • Divide For Layers (Optional)
  • Scoop out 1/2 cup each of the base for the chocolate and vanilla layers.

  • Separating early lets you build distinct flavors.

Make The Chocolate Layer

  • Whisk cocoa powder and maple syrup into one bowl of chia base until smooth.
  • Tip:
  • Sift cocoa powder to avoid lumps.

Make The Vanilla Layer

  • Add vanilla bean paste to the second bowl of chia base and mix well.
  • Tip:
  • Vanilla bean paste adds richer flavor and lovely specks.

Prepare The Espresso Layer

  • Mix cooled espresso, maple syrup, and optional coffee extract.
  • Tip:
  • Cool espresso completely to keep layers firm.

Assemble The Layers

  • Layer chocolate chia, vanilla chia, and drizzle espresso mixture between them. Top with yogurt or coconut cream.

  • Use a spoon or piping bag for neat, defined layers.

Add Final Touches

  • Dust with cocoa powder and garnish with chocolate shavings or cacao nibs.

Notes

For a richer dessert, use full-fat coconut milk.
